Corn Pudding



Thanksgiving is this week and boy did it sneak up on me! As much as I am excited for the little break to spend with family, I also realize the few holidays you look forward to have happened or is going to happen very soon. I still categorize myself as a newlywed, and by that I have not taken full responsibility on any cooking! I have had a few friendsgivings, along with just making a side or two for my family's thanksgiving. This leaves me posting this post. This recipe is my all time favorite and I could eat it and nothing else on thanksgiving. My family sure enjoys it as well. This recipe was given to my dad from our back-door-neighbors Jimmy and Kay. These two people I admire so much. When I was little, they just let me come over and hang out while they were watching TV or just doing things around the house. Needless to say, I love this recipe and the people who gave it to us! So, If you are needing to bring a side or two, why not try this one out and see what the crowd thinks.

Ingredients:

1 box jiffy mix

2 eggs

1 can creamed corn

1 can corn

1 stick butter

1 cup sour cream

Directions:

Preheat oven to 350. Melt butter in a mixing bowl. Add the box of jiffy and the two eggs. Mix well. Then add all other ingredients creamed corn, can corn (do not drain),and sour cream. Pop in a 9x9 dish and cook for one hour!

*The original recipe calls for two sticks of butter, I just substituted one stick for sour cream. It may cut 1 or 2 calories :)! It still tastes amazing!
